Strawberry jam

A sweet, spreadable preserve made by cooking crushed or chopped strawberries with sugar, and often lemon juice or pectin, until it thickens and sets.

Strawberries are naturally low in pectin and acid, so most recipes add lemon juice, commercial pectin or both to get a reliable set. The jam is cooked at a rolling boil until it reaches about 220°F (104°C) at sea level, or until a spoonful on a chilled plate wrinkles when nudged.

In baking, strawberry jam fills layer cakes, sandwich cookies, thumbprints, turnovers and jelly doughnuts. A thin layer brushed between cake layers adds flavor and helps hold the filling in place.
