Practical advice for your first or fiftieth tasting festival.
Many festivals sell timed sessions, and the early ones sell out first. Online tickets usually cost less than buying at the door.
Lines are shorter, sample tables are full, and vendors have time to talk about how they make their products.
Tasting cups are small, but they add up. Eat something early, drink water between booths, and ask roasters whether they have decaf.
Chocolate melts in a warm car. A cooler bag keeps truffles intact and makes bottles and bags of beans easier to carry.
Take a photo of the label or booth sign: roaster, origin, roast level or tea grade. That makes it easy to reorder after the show.
Many vendors offer festival-only discounts or bundles, often on the last afternoon when they'd rather not pack inventory back up.
Beans should be plump, glossy and flexible enough to bend around a finger. Brittle, dry beans are old.
Extract labeled "pure vanilla extract" must meet the FDA standard: at least 35% alcohol, with only vanilla beans, alcohol and water on the ingredient list. "Vanilla flavoring" is real vanilla with less alcohol. "Imitation vanilla" and "vanillin" don't come from the bean.
Be careful with very cheap "Mexican vanilla" from roadside or tourist stands. The FDA has warned that some of it contains coumarin, which is banned in U.S. food.
