Sandwich cookie
A cookie made of two crisp or soft cookies joined by a layer of filling such as buttercream, jam, ganache, marshmallow or dulce de leche.

- Cakes, cookies, pastries and baked goods
Also called: cookie sandwich, mouse-poultry, round sandwich biscuit, sandwich biscuit
Almost any thin, sturdy cookie can be sandwiched. Well-known kinds include French macarons, Linzer cookies with jam, alfajores with dulce de leche and whoopie pies with a fluffy cream filling. Matching cookies by size before filling gives neat results.
The cookies must cool completely before filling, or the filling will melt. Filled cookies often taste best after resting for a few hours, as moisture from the filling softens the cookies slightly and lets the flavors blend.
