Also called: jam doughnut

Jelly doughnuts are made from a soft, enriched yeast dough cut into rounds and fried until golden on both sides. Once they cool slightly, a hole is poked in the side and jam is piped into the center with a long tip. They are finished with granulated sugar or powdered sugar.

The jelly doughnut has many relatives, including the German Berliner, the Polish pączki eaten before Lent and the sufganiyah eaten during Hanukkah. Raspberry and strawberry jam are the classic fillings.
