Star tips come in two main kinds. Open star tips have straight, evenly spaced teeth and make bold, defined ridges; closed star tips have teeth that curve inward, giving deeper, tighter grooves. They range from small tips for borders and stars to large ones for cupcake swirls, meringue kisses and cream puffs.

For churros, a large star tip gives the classic ridged shape and helps the dough cook evenly and crisp up when fried. Stiff buttercream, whipped cream and meringue hold star patterns best, while soft frosting loses its ridges.
