Stabilized whipped cream

Whipped cream with an added ingredient, such as gelatin or mascarpone, that helps it hold its shape for hours without weeping.

  • Fillings, creams, frostings and sauces

Plain whipped cream slowly loses air and releases liquid, especially in warm rooms. To stabilize it, bakers add a small amount of bloomed and melted gelatin, mascarpone or cream cheese, powdered sugar containing cornstarch, or instant pudding mix, then whip the cream to firm peaks. The cream stays smooth and pipeable, and it holds sharp shapes.

Stabilized whipped cream is used to frost and fill cakes, pipe decorations, top pies made ahead, and fill cream puffs or rolls. It should still be kept cold, but it can sit in the refrigerator for a day or more while keeping its texture.
