Baking tools for this recipe

Instructions

  1. Chill a bowl and the whisk or beaters for 15 minutes.
  2. Sprinkle the gelatin over the cold water in a small bowl and let it bloom 5 minutes until thick and spongy.
  3. Microwave 5 to 8 seconds, stirring, until the gelatin turns liquid, then cool 2 to 3 minutes until just lukewarm.
  4. Beat the cream, powdered sugar and vanilla to soft peaks.
  5. With the mixer running on low-medium, stream in the cooled gelatin.
  6. Whip just until stiff peaks form; stop at once.
  7. Use right away for piping, or chill up to 3 days.

Tips

  • If the gelatin cools too much it clumps; remelt for 3 seconds and try again.
  • Do not overbeat or the cream turns grainy and buttery.
  • Gelatin sets the cream firmer after 30 minutes in the fridge.
  • Good with berry desserts.
