Confectioners' sugar

Very finely ground white sugar mixed with a little cornstarch, used for icings, glazes, dusting and smooth frostings. Also called powdered or icing sugar.

Confectioners' sugar: A bowl of fine, powdery confectioners' sugar with a sifter dusting sugar over a cake
  • Baking ingredients and additives

Also called: powdered sugar, icing sugar, 10X sugar

The cornstarch, usually about 3%, keeps the fine sugar from clumping. Because it dissolves instantly, it makes smooth, grit-free buttercream, glazes and royal icing. It doesn't replace granulated sugar one-for-one in batters.

Sift it before using to remove lumps, and dust it over desserts through a fine sieve just before serving.
