Mascarpone
A rich, soft Italian cream cheese made by heating cream and setting it with acid, with a mild, slightly sweet flavor.

- Baking ingredients and additives
Mascarpone has a high fat content, often around 60 to 75% of its dry matter, which makes it smooth and spreadable. It is the base of tiramisu and is folded into frostings, tart fillings and cheesecakes for richness.
It can curdle or turn grainy if overbeaten, especially when cold, so it's best folded or whipped briefly with cream.
