Strawberry pie

A pie filled with strawberries, most often fresh whole or halved berries held in a glossy glaze inside a fully baked crust and served cold.

Also called: strawberry tart

The classic American fresh strawberry pie is not baked with its filling. Some of the berries are cooked with sugar and cornstarch into a clear glaze, which is cooled slightly and folded over the remaining fresh berries in a blind-baked shell, then chilled until set.

Baked strawberry pies also exist, but strawberries are juicy and low in pectin, so they need plenty of thickener. They are often paired with rhubarb, whose tartness balances their sweetness.
