Glaze
A thin, glossy coating poured or brushed over baked goods, such as a powdered sugar glaze on doughnuts or an apricot glaze on fruit tarts.

- Fillings, creams, frostings and sauces
Also called: icing glaze
Sugar glazes are made from powdered sugar and a little liquid, set to a thin, shiny shell, and are often spooned over pound cakes, scones and doughnuts while they are slightly warm. Fruit glazes made from strained jam brushed over a tart add shine and keep the fruit from drying out.
Chocolate glazes, made from chocolate with cream, butter or corn syrup, set softer and glossier than a plain ganache.
