Fruit pie
A pie with a pastry crust and a filling of fresh, frozen or cooked fruit mixed with sugar and a thickener, often covered with a top crust, lattice or crumble.

- Cakes, cookies, pastries and baked goods
Apple, cherry, blueberry, peach and rhubarb are classic fruit pies. Juicy fruits need more thickener, such as cornstarch, tapioca or flour, and vents or a lattice let steam escape so the filling thickens instead of turning soupy.
Fruit pies are done when the crust is deep golden and the filling bubbles slowly in the center, which shows the thickener has fully cooked. Letting the pie cool for several hours before slicing gives the juices time to set.
