Berries
Small, soft fruits such as strawberries, blueberries, raspberries and blackberries, used fresh or cooked in pies, tarts, jams and toppings.

- Baking ingredients and additives
Berries are juicy and release a lot of liquid when baked, so pie and crumble fillings need a thickener such as cornstarch or tapioca. Tossing berries in a little flour before folding them into muffin or cake batter helps keep them from sinking.
Frozen berries work well in baking. Add them still frozen to batters to avoid streaking, and add a few minutes to the bake.
