Rhubarb is very sour on its own, and strawberries balance it with sweetness, color and aroma. Only the stalks are used; the leaves are not eaten. The fruit gives off a lot of juice, so the filling is mixed with sugar and a thickener such as cornstarch, tapioca or flour.

A lattice top lets steam escape so the filling can thicken. The pie should bake until the juices bubble in the center, then cool for several hours to set before slicing. It is a spring favorite, when rhubarb is in season.
