Instructions
- Mix the flour, yeast, sugar and salt. Add the milk, egg, yolk and vanilla, then the butter, and knead 8 to 10 minutes until smooth and slightly tacky.
- Cover and let rise in a warm place about 1 hour, until doubled.
- Roll out 1/2 inch (1.2 cm) thick and cut 3 inch (7.5 cm) rounds. Place on a floured tray, cover, and rise 30 to 40 minutes until puffy.
- Heat the oil in a deep heavy pot to 350 F (175 C).
- Fry 3 or 4 at a time, 1 to 1 1/2 minutes per side, until deep golden. Drain on paper towels.
- Roll in sugar while warm.
- Fill a piping bag fitted with a long tip with jam. Poke the tip into the side of each doughnut and squeeze in about 1 tablespoon until it feels heavy.
- Serve the same day.
Tips
- Keep the oil near 350 F (175 C); too cool makes greasy doughnuts, too hot burns the outside and leaves raw centers.
- Let the doughnuts cool 5 minutes before filling.
- Use seedless jam so the tip does not clog.
- Frying: keep oil at 350 F (175 C) by thermometer, never leave hot oil unattended, and keep a lid nearby to smother flames.
