Gugelhupf is popular in Austria, southern Germany, Switzerland and Alsace, where it is called kougelhopf. The classic version is a rich yeast dough with butter, eggs, raisins and lemon zest, baked in a deep, swirled mold lined with whole almonds. Modern versions are often butter or marble cakes made with baking powder.
The cake is dusted with powdered sugar and served in slices with coffee. Its mold, with a central tube and angled ridges, helps the dough bake evenly and gives the cake its distinctive look.
