Almonds are used whole in brittles and cookies, sliced on cakes and tarts, and ground into almond flour for macarons, frangipane and gluten-free baking. Blanched almonds have their skins removed for a paler, finer result.

Toast almonds at about 350°F (175°C) for 5 to 10 minutes, until fragrant. Almond extract is strong; a small amount goes a long way.
