Financiers are made from a simple batter of almond flour, powdered sugar, a little flour, egg whites and browned butter. The browned butter gives a deep, nutty flavor, and the egg whites keep the cake light while the almonds keep it moist.

They are baked in small molds, traditionally rectangular so they resemble little gold bars, though oval and round shapes are common. The outside turns crisp and golden at the edges while the inside stays tender. Financiers are often flavored with fruit, pistachio or chocolate and are a classic of French pastry shops.
