Almond flour
Finely ground blanched almonds, used in macarons, frangipane and gluten-free baking.

- Baking ingredients and additives
Also called: almond meal, ground almonds
Almond flour is made from blanched almonds with the skins removed; almond meal is coarser and may include skins. It is high in fat and has no gluten, so it gives moist, tender, dense results and browns quickly.
It can't replace wheat flour one-for-one in most recipes. Store it in the refrigerator or freezer, because its oils can turn rancid.
