Clafoutis comes from the Limousin region of central France. Cherries are arranged in a buttered baking dish and covered with a pancake-like batter of eggs, milk, sugar and a little flour, then baked until puffed and golden. In the traditional version the cherries are not pitted, which adds a light almond flavor.

The dessert sinks as it cools and is served warm or at room temperature, dusted with powdered sugar. When other fruits like plums, pears or apples are used, the French call it a flaugnarde.
