Firm varieties such as Bosc and Anjou hold their shape when baked or poached; Bartlett is softer and best when just ripe. Pears ripen from the inside out, so check by pressing gently near the stem.

Poached pears in wine or vanilla syrup are a classic dessert. Pear and almond frangipane tart and pear with ginger or chocolate are classic pairings.
