Room temperature: softened butter sticks and whole eggs on the counter next to a mixing bowl, the butter just dented by a finger press
  • Measurement, dietary and professional terminology

Softened butter creams with sugar to hold air, and eggs and milk at the same temperature blend in smoothly instead of chilling the butter and making the batter curdle. Room-temperature butter is best at about 65°F (18°C): it should dent when pressed but still feel cool, not greasy or melting.

To warm eggs quickly, put them in a bowl of warm water for a few minutes; cut butter into small pieces to soften it faster.
