Cherry pie
A pie filled with cherries, usually tart sour cherries, thickened and baked in a pastry crust with a lattice or full top.

- Cakes, cookies, pastries and baked goods
Sour cherries such as Montmorency give the classic bright, tangy flavor; sweet cherries need less sugar and a squeeze of lemon. Cherries release a lot of juice, so the filling usually uses cornstarch or tapioca and must bubble in the center to set.
A lattice top lets steam escape and shows off the red filling. Letting the pie cool for several hours lets the juices thicken.
