Also called: Chinese almond cake, Chinese almond cookie

The Chinese almond biscuit is a dry, sandy-textured cookie. Its dough is based on mung bean flour, sugar and fat, mixed with ground or chopped almonds, and it is packed into a carved wooden mold that shapes it into a round with a raised pattern on top.

In Macao, where the biscuit is a famous local specialty, traditional bakers still fill the molds by hand and bake the biscuits in charcoal ovens, which gives them a light toasty aroma. Some traditional versions also include a small piece of sugared pork. The biscuits are crisp on the outside, melt-in-the-mouth crumbly inside, and are a popular gift and souvenir.
