Also called: almond cookie

The Chinese almond cookie is a round, pale golden cookie made with flour, sugar, egg and lard or butter, flavored with ground almonds or almond extract. A whole or half almond is pressed into the center, and the top is brushed with egg wash before baking. These cookies are a popular gift during Lunar New Year.

Many other baking traditions have their own almond biscuits, from crunchy Italian biscotti to chewy cookies made mostly from almond flour and egg whites. Almond extract is strong, so a little goes a long way in any version.
