Black sesame is used throughout Chinese, Japanese and Korean sweets, in fillings for mochi and glutinous rice balls, sweet soups, ice cream and cakes. Ground to a paste, it turns creams, buttercreams and custards a soft gray color with a rich, nutty taste.

Toasting the seeds before grinding brings out their flavor. Because the seeds are dark, it is hard to see when they are done, so toast them over low heat and stir often, stopping as soon as they smell nutty and begin to pop.
