Instructions

  1. In a large bowl, beat the black sesame paste with 1/4 cup of the cream until smooth and loose.
  2. In a chilled bowl, whip the remaining cream, confectioners' sugar, with the vanilla and salt to stiff peaks.
  3. Fold the whipped cream into the black sesame paste mixture in two additions until evenly combined.
  4. Refrigerate for 30 minutes. Spoon the filling into a piping bag fitted with a long filling tip. Poke a small hole in the side of each cooled doughnut and pipe in about 2 tablespoons, until the doughnut feels heavy.

Tips

  • Vanilla swap: use vanilla bean paste 1:1 in place of the extract for visible specks, or the seeds of 1 vanilla bean for each tablespoon of extract.
  • Best vanilla for this: Ugandan (bold, chocolatey, smoky), or Mexican (spiced, warm, woodsy). Any pure vanilla works.
  • Storage: Refrigerate for up to 2 days; keep filled doughnuts chilled.
