Pastes arrived with Cornish miners who came to work the silver mines around Pachuca and Real del Monte in the 1800s. Local cooks adapted the pasty to Mexican tastes, and the town of Real del Monte is still known for them.

The classic filling is potato and beef, but sweet pastes are common too, filled with pineapple, apple, rice pudding or sweetened beans. Unlike many Cornish pasties, the filling is usually cooked before it goes into the dough, so the pastries bake quickly.
