Nut butter
A spread made by grinding roasted nuts such as peanuts, almonds or cashews into a smooth or chunky paste.

- Baking ingredients and additives
Also called: peanut butter, almond butter
Grinding releases the nuts' oils, turning them into a creamy paste. Natural nut butters separate, with oil rising to the top, and must be stirred; no-stir versions add stabilizers. In baking, the type matters: natural nut butters can make cookies drier and more crumbly than stabilized ones.
Peanut butter cookies, bars and fillings are classic; almond butter and cashew butter work similarly.
