Matcha
A finely ground powder of shade-grown Japanese green tea leaves, whisked into drinks or used to color and flavor desserts.

- Baking ingredients and additives
Also called: matcha powder
Matcha comes from tea plants shaded for several weeks before harvest, which deepens their green color and savory, slightly sweet flavor. Ceremonial grade is meant for drinking; culinary grade is stronger and cheaper for baking.
Sift matcha before using, since it clumps. Its flavor and color fade with heat and time, so it is best in lightly baked or no-bake desserts like ice cream, mousse and frosting.
