Almond paste usually contains roughly equal parts almonds and sugar, so it is less sweet and coarser than marzipan, which has more sugar and is smooth enough to roll and shape. Almond paste is meant for baking, as in bear claws, almond croissants, Italian almond cookies and almond cakes.

It firms up in storage, so soften it before using. To avoid lumps, break it up with the sugar or a little egg first, beating until smooth before adding butter and the rest of the ingredients.
