Almond extract

A concentrated flavoring with a strong, sweet, cherry-like almond aroma, used in very small amounts in cakes, cookies, frostings and fruit desserts.

Most of almond extract's flavor comes from benzaldehyde, which is found in bitter almonds and in the kernels of apricots and peaches. Pure extract is made from these natural oils, while imitation versions use benzaldehyde made another way; they taste very similar.

Almond extract is far stronger than vanilla, so recipes often call for just 1/4 to 1/2 teaspoon. It pairs especially well with cherry, apricot, raspberry and peach, and it boosts the flavor of frangipane, almond paste and sugar cookies.
