Also called: jelly roll, roll cake, roulade, sweet roulade

The sponge is baked quickly in a shallow jelly roll pan so it stays soft and flexible. While still warm, it is usually rolled up in a towel or parchment so it sets in a curved shape. Once cool, it is unrolled, spread with filling and rolled again, seam side down.

Overbaking is the main cause of cracking, so the cake should come out as soon as it springs back when touched. Swiss rolls are also called jelly rolls or roll cakes, and the French bûche de Noël is a version decorated to look like a log.
