Instructions
- Heat the oven to 400 F (200 C). Grease a 10x15-inch (25x38 cm) jelly roll pan and line with parchment.
- Beat the eggs, sugar and vanilla on high for 8 to 10 minutes until pale, thick and tripled, and the batter falls in a ribbon that stays on the surface for 3 seconds.
- Sift the flour, baking powder and salt over the eggs in two additions and fold gently with a spatula until no streaks remain.
- Spread evenly in the pan and bake 9 to 11 minutes, until golden and the top springs back.
- Immediately turn the cake out onto a clean towel dusted with sugar, peel off the parchment, and roll the cake and towel together from the short end. Cool 15 minutes.
- Gently unroll, spread with jam to within 1/2 inch (1.25 cm) of the edges, and reroll without the towel.
- Place seam-side down on a plate and dust with sugar. Trim the ends for neat slices.
Tips
- Whip the eggs long enough; the volume is the only leavening.
- Do not overbake or the sponge will crack when rolled.
- Warm the jam for 10 seconds if it is stiff, to spread easily.
- Good with tea.
