Quarter sheet pan

A quarter sheet pan is a small rimmed baking sheet, about 9 by 13 inches, one quarter the size of a full commercial sheet pan.

A quarter sheet pan is the smallest of the standard rimmed baking sheets. A University of Tennessee Extension handout lists the sheet pan sizes as full sheet 26 by 18 inches, half sheet 13 by 18 inches and quarter sheet 9 by 13 inches, and describes sheet pans as baking sheets with a 1 inch high rolled rim.

The full sheet may not fit a home oven, and Penn State Extension notes the 13 by 18 inch half sheet is the most common sheet pan for home cooks. The quarter sheet is a convenient size for small batches: a handful of cookies, a toaster-oven bake, roasted nuts, or a small tray of brownies or bars. It also holds ingredients ready for mise en place or catches drips under a pie.

Because the rim is rolled rather than flat, the pan keeps liquids and crumbs contained and stays rigid in the oven. Line it with parchment for easy cleanup.
