Mise en place
A French kitchen term meaning everything in its place: measuring and preparing all ingredients and tools before you start.

- Measurement, dietary and professional terminology
- French
In baking it means reading the recipe through, weighing ingredients, bringing butter and eggs to the right temperature, lining pans and heating the oven before mixing begins. Many recipes, such as meringues, caramel and genoise, move too quickly to stop and measure halfway through.
It also makes it easy to spot a missing ingredient before it is too late.
