Batch

The quantity made from one round of a recipe, or the amount baked at one time, such as one batch of cookie dough or one sheet of cookies in the oven.

Batch: A sheet pan of evenly spaced cookie dough balls next to a mixing bowl of dough
  • Measurement, dietary and professional terminology

A recipe that makes 36 cookies might be baked in three batches on one sheet pan. Letting the pan cool between batches keeps later cookies from spreading too much, since dough placed on a hot pan starts melting early.

Bakers often double or halve a batch. Some mixtures, such as candy, caramel and jam, behave best in single batches, because a larger pot changes how fast they cook and reach the right temperature.
