Peppermint extract is very concentrated, so recipes typically use 1/4 to 1 teaspoon, and it is easy to overdo. Start small and taste. It differs from mint extract, which often blends peppermint with spearmint for a softer, sweeter flavor.

It is a classic in mint chocolate buttercream, peppermint bark, brownies, royal icing and holiday cookies. When flavoring melted chocolate, add only a few drops, since liquid can make chocolate seize; a peppermint oil made for candy is a safer choice there.
