Also called: peppermint, spearmint, breath mint, mint candy

Peppermint is strong and cooling, with a high menthol content, and is the usual flavor for peppermint bark, mint chocolate chip ice cream and candy canes. Spearmint is milder and sweeter.

Peppermint extract is very concentrated; ¼ teaspoon is often enough for a whole batch. Fresh mint is best infused into cream or syrup, then strained.
