Nutmeg
A warm, sweet, slightly woody spice from the seed of the nutmeg tree, used in custards, eggnog, doughnuts and spice blends.

- Baking ingredients and additives
Freshly grated whole nutmeg is much more aromatic than pre-ground. Only a little is needed; ¼ to ½ teaspoon flavors most recipes. Mace is the lacy red covering around the seed and has a similar but more delicate flavor.
Nutmeg is classic in custard pies, eggnog, béchamel and cake doughnuts.
