Hot fudge sauce is made by simmering cream, sugar, corn syrup, cocoa powder or chocolate and butter until smooth and thickened. The corn syrup keeps it glossy and smooth. It is richer and thicker than chocolate syrup, and it firms up as it cools.

It is the classic topping for a hot fudge sundae with whipped cream and a cherry. It keeps in the refrigerator for a couple of weeks and is rewarmed gently in a water bath or the microwave, stirring often.
