Corn syrup

A syrup made from corn starch, mostly glucose, used to keep candies and frostings smooth by stopping sugar from crystallizing.

Also called: light corn syrup, glucose syrup

Light corn syrup is clear and mildly sweet; dark corn syrup adds molasses-like flavor. Its glucose molecules get in the way of sugar crystals, so it keeps caramels, fudge, marshmallows and glazes smooth, and helps pecan pie set glossy.

Regular corn syrup isn't the same as high-fructose corn syrup. Golden syrup or glucose syrup can usually stand in.
