The pancakes for dorayaki are made from a batter of eggs, sugar, flour and honey, which makes them tender, slightly spongy and evenly golden. They are cooked on a griddle so the top side stays smooth. A thick layer of sweet azuki bean paste goes between two pancakes, which are pressed together at the edges.

Dorayaki is popular across Japan and is one of the best-known wagashi outside the country. Some versions use chestnuts, custard, matcha cream or whipped cream. They are best eaten fresh.
