Baking tools for this recipe

Instructions

  1. Whisk the eggs, sugar and honey for about 2 minutes until thick and pale.
  2. Sift in the flour and baking powder and fold with water until smooth. The batter should flow like thick pancake batter.
  3. Rest 30 minutes at room temperature or up to 1 hour in the refrigerator.
  4. Wipe a nonstick pan with a little oil and heat over low, then medium-low. Pour 3 tablespoons of batter into a 3.5 inch (9 cm) round.
  5. Cook 1 to 1.5 minutes until bubbles form and the surface looks dry at the edges. Flip and cook 20 to 30 seconds.
  6. Cool the 12 pancakes on a rack under a clean towel to keep them soft.
  7. Spread 50 g of bean paste on a pancake, top with another and press gently. Serve.

Tips

  • Keep the heat low and even so the faces brown uniformly.
  • Wipe the pan between batches for a clean golden face.
  • Wrap each finished dorayaki in plastic wrap to stay soft.
  • Good with green tea.
