Honey
A thick, sweet syrup made by bees from flower nectar, used to sweeten and add moisture and flavor to baked goods.

- Baking ingredients and additives
Honey is sweeter than sugar and holds onto moisture, so cakes and breads made with it stay soft longer and brown faster. To replace sugar with honey, a common rule is to use about ¾ cup honey per cup of sugar, reduce the liquid by about ¼ cup, add about ¼ to ½ teaspoon of baking soda per cup of honey and lower the oven by about 25°F (15°C).
Honey shouldn't be given to babies under 1 year old.
