Also called: pat-bingsu
Bingsu starts with a tall mound of very finely shaved ice. Many modern shops freeze milk instead of plain water, so the shavings are soft, snowy and creamy rather than crunchy. The best-known version, patbingsu, is crowned with sweetened red beans, small chewy rice cakes and a drizzle of condensed milk.
Today there are many styles, from mango, strawberry and melon to green tea, coffee, black sesame and roasted soybean powder. Bingsu is meant for sharing: one large bowl is set in the middle of the table and everyone eats from it with long spoons before it melts.
