Shaved ice is made by shaving a block of ice with a sharp blade so it falls as soft, fluffy flakes rather than crunchy crushed pieces. The fine texture absorbs syrup evenly instead of letting it run to the bottom of the cup. It is mounded into a bowl or cone and poured over with fruit syrups.

Many cultures have their own versions. Japan has kakigori, Korea has bingsu, the Philippines has halo-halo and Hawaii is known for shave ice. Common toppings include sweetened condensed milk, sweet beans, fruit, mochi and ice cream. It is one of the most popular hot-weather treats around the world.
