Ripe mangoes give slightly to gentle pressure and smell sweet at the stem. Flesh is cut away from the large, flat seed; scoring it in a grid makes neat cubes. Ataulfo, also called honey mango, is especially smooth and fiberless.

Mango purée is used in sorbet, mousse, panna cotta, cheesecake and smoothies. It pairs well with lime, coconut and passion fruit.
