Tart
A pastry with a crisp, open-topped shell, usually baked in a shallow pan with straight, fluted sides, holding a sweet or savory filling.

- Cakes, cookies, pastries and baked goods
Also called: tarte
Tart shells are usually made from a richer, sweeter dough than pie crust, such as pâte sucrée, and are often blind-baked. Fillings include pastry cream topped with fresh fruit, lemon curd, frangipane, ganache and baked custards.
A tart pan with a removable bottom lets the tart be lifted out cleanly and served free-standing, which a pie usually is not.
