Blueberry pie
A fruit pie filled with blueberries, sugar, lemon and a thickener, baked in a flaky crust.

- Cakes, cookies, pastries and baked goods
- United States
Blueberries release a lot of juice, so the filling needs cornstarch or tapioca and must bubble in the center to set. Lemon juice and zest brighten their flavor. Wild blueberries are smaller and more intense.
Let the pie cool for at least 3 to 4 hours before slicing, so the filling sets and doesn't run.
